Capocollo is one of the typical Umbrian products par excellence, obtained from the processing of the muscular part of the pig's neck, it is a mainly lean sausage with some veins of fat that make it unique in taste.
The purchase is of nr. 1 pc of capocollo is equivalent to the purchase of 1/3 of a whole capocollo (a slice) the weight can vary between 750 and 850 gr depending on the size, seasoning and the "hand of pork butcher". The craftsmanship of our products does not provide for automation and industrialization of the processes, therefore there may be small differences in weight compared to those indicated.
